3 pounds ground beef 1 red pepper-diced 1 vidalia or walla walla onion-diced 2 tsp minced garlic 2 cans stewed tomatos 2 cans diced tomatoes 1 can tomato paste 2 14 ounce cans of tomato sauce 1 /4 cup JAR - either red or greed bottle 2 tablespoons to 1/4 cup Shad hot sauce depending on you preference for heat. 2 cans of dark red kidney beans Cumin, chili powder, black pepper, papricka, and cayenne pepper to taste.
Brown the ground beef with the onions and peppers. Drain. Add the garlic, let simmer for 5 minutes. Add the tomatoes and the juice they came in. Let simmer for 5 minutes. Add the paste and sauce. Let simmer while you gather your Jar Hot Sauces and spices. Add the sauces, taste the chili, add some spices and then taste again. Everyone likes different levels of heat. I usually take some out of the pot for me and the light weights and then add more Shad for the pepper heads I know. I usually simmer for about a 1/2 hour to make sure all the flavors combine. It is excellent by itself, with cheese on top, served with corn bread (my favorite) or served on top of hot dogs. This is not a watery chili with noodles, its pretty hearty!
